Ingredients
Small cuts of lean stew beef - 1 ½ lb ( you can also use short ribs or other stew meat if you want more fat in the soup )
White short grain rice - 1 cup rinsed at least 5 times
Diced tomatoes - 1 can ( 14.5 oz )
Tkemali Sauce - 2 tablespoons ( Georgian Sour Plum Sauce, you can replace it with red wine vinegar or duck sauce )
Garlic - 4-5 cloves ( pressed )
Walnuts - 100g ( ground )
Jalapeno pepper - 1pcs ( Serrano or Green Chili )
Khmeli-suneli spices - 2 tablespoons ( you can replace it with mix of herbs: fenugreek seeds, chili powder, dried parsley, dried marjoram, dried tarragon and dried coriander )
Onion ( medium ) - 2pcs
Avocado or Olive oil - 2 tablespoons
Lemon juice - 1 tablespoon
Cayenne pepper - 1 teaspoon
Mix of fresh dill and cilantro - 1 ½ cup ( leave some for garnish at the end )
Bay leaf - 2pcs
Water - 10 cups
Kosher Salt - to taste ( I sued 2 tablespoons )
Pepper - to taste

Preparation
You will be surprised, but winters in California might get chilly as well. And during the colder season you are always looking for warm comfort food…. something like a warm soup for example.
So, today I want to show you a recipe of traditional Georgian soup called Kharcho which in Georgian means “beef soup”.
Normally it takes about two and a half hours to make this amazing soup, but today I will show you how to make it in under an hour in an Instant Pot. This cooking method will save you a lot of time and you will be impressed with the result.
Step#1
Pre-cut all the vegetables and herbs: onions, jalapeno, dill and cilantro. Press garlic and ground walnuts in the food processor.
Step#2
Turn on saute mode in your pressure cooker, add some oil and cook meat until it gets brown ( about 5-7 minutes ). Now add onions and saute until onions will become translucent ( give it another 5-7 minutes ).
Now, we can add the rest of the ingredients into the pressure cooker. Make sure you rinse the rice well before putting it into the Instant Pot.
Step#3
Set Instant Pot on manual or high pressure cooking mode for 20 minutes. Now it is time to relax with your favorite drink
Use a natural release method when cooking soups so it doesn’t splash everywhere!
Ok, it is ready! You can put some dill and cilantro on top as well.
It turned out really well. If you try it once, it will become your favorite soup of the winter season.
