Ingredients
I have made 16 chebureki from meat proportions below.Â
Uncooked flour tortillas ( Medium Soft Taco Size ), example here: https://www.instacart.com/products/39989-tortillaland-tortillas-uncooked-flour-medium-soft-taco-size-12-eaÂ
Ground beef - 1lbÂ
Ground pork - 1lb ( you can also try ground lamb )
Onion - 2pcs
Garlic - 3 cloves
Parsley - 5-6 sprigs
Salt & PepperÂ
Avocado or Olive oil ( I am using avocado oil spray )Â
Other Spics ( optional ) - I used trader joe's ajika georgian seasoning blend: https://www.traderjoes.com/home/products/pdp/ajika-georgian-seasoning-blend-068324Â

For vegetarian version ( from proportions below I have made 8 chebureki ):Â
Potatoes ( boiled ) - 4 pcs
Onion - 1pcs
Mushrooms ( white button or cremini mushrooms) - 5pcs
Preparation
Cheburek is technically a deep fried turnover with minced meat, onion and some spices inside.  Â
Nowadays I am trying to avoid deep fried foods, therefore I wanted to share with you a healthy version of Chebureki made in an Airfryer.Â
Step#1 Making the fillingÂ
Chop onion, garlic and parsleyÂ
Mix it all together with ground meatÂ
Add salt ( about 1 tablespoon ), a lot of pepper and some spices. Mix it all very well together.Â
Step#2Â
Add about 2 tablespoons of filling on one side of the tortilla. Before folding another side of the tortilla, use some water to wet the sides, it will make it stickier. Using a wet fork, press it well on both sides of the tortilla to close it up.Â
We are almost done.Â


Step#3
I can fit 2 of them in the airfryer at once. Spray some oil on top and set for 10 minutes and bake at 330 degree fahrenheit.Â
It turned out really well, and it doesn't get easier than that.Â
Now if you want to experiment with the vegetarian version, I have tried to make it with potatoes, mushrooms and onions.         Â
To do that you need:Â
boil and mash potatoes
Saute mushrooms and after 5 min add onions and saute for another 5 minutes.Â
Mix potatoes, mushrooms and onions, add salt and pepper.Â
Now you can follow the same process from step#2 and #3
Both meat and potato options come out really good. Personally I prefer the original version with meat but if you need to make vegetarian/vegan options, potatoes and mushrooms are a good alternative.Â
