Ingredients
Dough:
All purpose flour - 800g
Water ( warm ) - 350ml
Salt - 1 tablespoonÂ
Avocado or olive oil - 1 ½ tablespoonÂ
Filling:
Boiled potatoes - 4pcs
Mix of cheeses - 1 cup ( I used mix of mexican and parmesan cheeses )Â
Unsalted butter - 1 stick Â
Salt - 1 teaspoonÂ
Mixed herbs: I used 1 bunch of onion and 1 bunch of parsley
Seasonings: I used some pepper, cheesy seasoning, sweet paprika and truffle seasoningÂ
Preparation
Katlama is a popular flatbread from Uzbekistan, it is also popular in other countries in Central and South East Asia.Classic Katlama is typically made with meat and fried in oil. But there are options with onion, herbs, farmers cheese, different meats, cheeses, various spices and a sweet version with powdered sugar and other desert fillings and bla bla bla.Â
It is a very tasty dish which goes well for lunch or dinner and as a great appetizer.Â
Step#1 Making a dough
Sift flourÂ
Mix 1 tablespoon of salt in the warm water
Start adding water to the flour while kneading
Add 1 ½ tablespoon of olive or avocado oil to make dough more elastic
Let dough sit at room temperature for 20min. Dough should come out very elastic and easy to roll to a thin layer Â
Step#2 Making the filling
Mash boiled potatoes with cheese, salt and spices. If the filling will come out too dense you can add a bit of water or milk.Â
Chop onion and parsley.Â
Step#3 Making Katlama
Cut dough in 4 equal pieces.Â
Flour the surface and the rolling pin and start rolling the dough in the shape of a larger circle. Roll it as thin as possible.Â
Cover the surface of the dough with melted butterÂ
Spread potato-cheese filling and sprinkle some greens on top.Â
Start rolling the dough into the roll and then you roll it into the spiral.
Using a rolling pin and hands spread the spiral into the flat bread shape.Â
Step#4 Cooking Katlama
Option #1 cooking in the pan
Add some oil and fry Katlama on medium heat under the lid for about 7 min. Remember to flip sides every few min.Â
Option #2
Cooking in a new trendy appliance called airfryer….everyone is crazy about this new toy. A healthier option with less oil.Â
Set the airflyer for 15min at 350 degree Fahrenheit. Remember to flip Katlama in the middle of the process. Note that each model of air fryer is different, so you might need to slightly adjust temperature or cooking time.Â

Look at this beauty, the version from airfier looks a bit more puffier but both versions taste equally great.Â
