Katlama with potato, cheese and herbs in an air fryer

Ingredients

Dough:


  • All purpose flour - 800g

  • Water ( warm ) - 350ml

  • Salt - 1 tablespoon 

  • Avocado or olive oil - 1 ½ tablespoon 


Filling:


  • Boiled potatoes - 4pcs

  • Mix of cheeses - 1 cup ( I used mix of mexican and parmesan cheeses ) 

  • Unsalted butter - 1 stick  

  • Salt - 1 teaspoon 

  • Mixed herbs: I used 1 bunch of onion and 1 bunch of parsley

  • Seasonings: I used some pepper, cheesy seasoning, sweet paprika and truffle seasoning 


Preparation

Katlama is a popular flatbread from Uzbekistan, it is also popular in other countries in Central and South East Asia.Classic Katlama is typically made with meat and fried in oil. But there are options with onion, herbs, farmers cheese, different meats, cheeses, various spices and a sweet version with powdered sugar and other desert fillings and bla bla bla. 

It is a very tasty dish which goes well for lunch or dinner and as a great appetizer. 


Step#1 Making a dough


  1. Sift flour 

  2. Mix 1 tablespoon of salt in the warm water

  3. Start adding water to the flour while kneading

  4. Add 1 ½ tablespoon of  olive or avocado oil to make dough more elastic

  5. Let dough sit at room temperature for 20min. Dough should come out very elastic and easy to roll to a thin layer  


Step#2 Making the filling


Mash boiled potatoes with cheese, salt and spices. If the filling will come out too dense you can add a bit of water or milk. 

Chop onion and parsley. 


Step#3 Making Katlama


  1. Cut dough in 4 equal pieces. 

  2. Flour the surface and the rolling pin and start rolling the dough in the shape of a larger circle. Roll it as thin as possible. 

  3. Cover the surface of the dough with melted butter 

  4. Spread potato-cheese filling and sprinkle some greens on top. 

  5. Start rolling the dough into the roll and then you roll it into the spiral.

  6. Using a rolling pin and hands spread the spiral into the flat bread shape. 



Step#4 Cooking Katlama


Option #1 cooking in the pan


Add some oil and fry Katlama on medium heat under the lid for about 7 min. Remember to flip sides every few min. 


Option #2


Cooking in a new trendy appliance called airfryer….everyone is crazy about this new toy.  A healthier option with less oil. 

Set the airflyer for 15min at 350 degree Fahrenheit. Remember to flip Katlama in the middle of the process. Note that each model of air fryer is different, so you might need to slightly adjust temperature or cooking time. 

 


Look at this beauty, the version from airfier looks a bit more puffier but both versions taste equally great.
