Kebab in an air fryer with an eggplant salad

Ingredients

Salad: 


  • Eggplant ( halved ) - 1 

  • Tomatoes ( halved ) - 2 

  • Bell pepper ( halved ) - 1 

  • Garlic head ( halved ) - 1 

  • Onion ( halved ) - 1 

  • Salt & pepper - to taste 

  • Extra virgin olive oil 


Make Kebab: 


  • Minced Beef - 2lb

  • Parsley ( chopped ) - 1 bunch 

  • Onion ( chipped & sauteed ) 

  • Salt & pepper 

  • Chili flakes 

  • Oil spray   


Additional ingredients for serving: 


  • Zhug sauce 

  • Greek yogurt 

  • Pitta bread

Preparation


Make eggplant salad 

  • Half all the vegetables, sprinkle salt, pepper and olive oil. Roast vegetables in the oven or on the grill ( 30-40 min @ 450°F ) 

  • Remove tomato and eggplant skin and finely chop all the vegetables. 

  • Add more salt, pepper and olive oil to taste.

Make kebab

  • Combine minced meat with chopped parsley, sauteed onions, salt, pepper and chili flakes. 

  • From 2 tablespoons of minced meat make kebab meatballs slightly flattened and extended into kebab shapes.  

  • Air Fry for 10-11 min @ 380°F 


Serve warm in pitta bread with greek yogurt and zhug sauce
