Ingredients
Salad:Â
Eggplant ( halved ) - 1Â
Tomatoes ( halved ) - 2Â
Bell pepper ( halved ) - 1Â
Garlic head ( halved ) - 1Â
Onion ( halved ) - 1Â
Salt & pepper - to tasteÂ
Extra virgin olive oilÂ
Make Kebab:Â
Minced Beef - 2lb
Parsley ( chopped ) - 1 bunchÂ
Onion ( chipped & sauteed )Â
Salt & pepperÂ
Chili flakesÂ
Oil spray  Â
Additional ingredients for serving:Â
Zhug sauceÂ
Greek yogurtÂ
Pitta bread
Preparation
Make eggplant saladÂ
Half all the vegetables, sprinkle salt, pepper and olive oil. Roast vegetables in the oven or on the grill ( 30-40 min @ 450°F )Â
Remove tomato and eggplant skin and finely chop all the vegetables.Â
Add more salt, pepper and olive oil to taste.Â

Make kebab
Combine minced meat with chopped parsley, sauteed onions, salt, pepper and chili flakes.Â
From 2 tablespoons of minced meat make kebab meatballs slightly flattened and extended into kebab shapes. Â
Air Fry for 10-11 min @ 380°FÂ
Serve warm in pitta bread with greek yogurt and zhug sauce
