Keema naan in an air fryer

Ingredients

Dough: 


  • All purpose flour - 2 cups 

  • Egg - 1

  • Baking powder - 3 tsp

  • Salt - ½ tsp 

  • Milk - ½ cup 

  • Sugar - ½ tsp 

  • Oil - some to place on your hands when kneading and 1 tbsp to grease the bowl 

  • Some water in case the dough is too dry. 


Stuffing: 


  • Ground lamb- 300g 

  • Jalapeno or chili pepper ( finely chopped ) - 1 

  • Red onion ( finely chopped ) - ½ 

  • Garlic ( minced ) - 3 cloves 

  • Salt & pepper - to taste 

  • Coriander powder - 1 tsp 

  • Chili powder - 1 tsp

Preparation

Make dough: 


  1. Add all the ingredients in the bowl ( except flour ) and whisk. Add flour and mix well. Add some oil to your hands and start kneading dough. You might need to add some water or flour to get the dough to the right consistency. 

  2. Grease a medium size bowl with oil and let dough rest inside under the kitchen towel in the warm place. 


Make stuffing: 


Combine all the ingredients in the medium size bowl and mix well. 



Making keema naan: 



  1. Separate dough into 3 equal size balls 

  2. Dust the surface with flour and gently flatten the stuffed dough ball into a naan with your hands. You can use a rolling pin as well, but it would be more difficult to make an even circle shape. 

  3. Separate stuffing into 3 equal size balls.  Place meatball staffing in the middle of the dough cercle and gently pinch the dough on the top to make a dumpling. Flip dumpling to another size and roll it out. Repeat it on both sides to make a perfect round shape 

  4. Using the bottom of a wooden spoon make holes all over the dough. This will let the air in the dough escape while cooking.

  5. Brush naan surface with the egg white or yogurt and sprinkle some sesame seeds, it is ready to bake. 

  6. You can cook naan in the skillet, oven or air fryer. I prefer the version from the skillet as it comes out more moist….air fryer version is a bit dry. Before baking naan in the oven or air fryer, place it on the skillet on medium heat for about 5 min until the bottom is golden. This step prevents naan from losing the bottom part during baking or air frying. 


Oven: bake at 375°F  for 15-20 min or until the top is golden brown. Spray some oil. 

Air Fryer: air fry at 375°F for 15 min or until top is golden brown color. Spray some oil. 


  1. When ready, brush naan with melted butter and serve with the sauce. I prefer to serve it with raita.
