Ribs in the pressure cooker or Instant Pot

Ingredients

  • Pork back ribs - 3lb

  • BBQ rub and seasoning of your choice ( I prefer Trader Joe’s BBQ rub and seasoning with coffee and garlic ). Alternatively you can make your own rub, directions below.

  • Apple juice - 2 cups ( alternatively you can use water ) 

  • Liquid smoke - 1 teaspoon

  • Apple cider vinegar - 2 tablespoons

  • BBQ sauce of your choice

How to make your own rub ( optional ) 


Mix the following ingredients, you can substitute or adjust spices to your own liking:

  • Brown sugar - 2 teaspoon 

  • Kosher salt - 1 ½   teaspoon

  • Garlic powder - 1 teaspoon 

  • Chili powder - 1 teaspoon

  • Ground mustard - 1 teaspoon 

  • Paprika - 1 teaspoon

  • Ground cumin - ½ teaspoon 

  • Ground black pepper - ½ teaspoon  

  • Cayan pepper - ¼ teaspoon 

Preparation

With 4th of July coming up it is now time for me to share my favorite recipe, BBQ ribs. On my channel I have made ribs in the oven as well as in the dutch oven….both cooking options worked really well, but it takes a long time to cook low and slow using the oven.  

Today I will show you how to speed up the cooking process using Instant Pot or Pressure Cooker and still come up with amazing ribs. Trust me, you will be amazed with the results. 


Step #1


Take the ribs from the fridge and pat them dry with the paper towel. Now, you can make your own rub seasoning ( see list of ingredients above ) or you can use the store bought one. Season the ribs really well on both sides with the rub. Don’t be shy, rub it in with your hands. 

Pro tip: use disposable food preparation gloves, it will keep the process a lot cleaner.

Step #2


Pure 2 cups of apple juice ( alternatively you can use water ), 2 tablespoons of apple cider vinegar and 1 teaspoon of liquid smoke inside the instant pot. 


Adding apple juice and vinegar makes ribs act like salt making ribs moist and also adds a nice apple flavor. 


Add Instant Pot trivet to the bottom of the pot, it will elevate the ribs so they are not submerged in a liquid while cooking.

Set Instant Pot for 25 minutes at manual high pressure. Let natural pressure release for 10 minutes and then release remaining pressure manually. 


Now, brush your favorite BBQ sauce on the ribs. I am using sweet and spicy pineapple sauce from Trader Joes. 


Put ribs in the oven on a high broil setting for about 5 minutes. When ready, brush a bit more BBQ sauce on top.    


This is it, we are done. Quick and simple. Your family and friends will be impressed with these ribs. You can serve them with baked potatoes, corn, greens or potato salad.
