Ingredients
Butter - 2 tbsp
Red onion (diced ) - 1 pcs Â
Delicata squash ( cut in half, remove seeds and cut in half moons ) - 1 pcs ( about 3 lb )Â Â
Tomato ( medium size, sliced ) - 1 pcsÂ
Broth ( vegetable or chicken ) - 1 cup
Apples ( medium size, sliced ) - 1pcs
Green beans - ½ cup Â
All purpose flour - ½ cup
Whole milk - 1 ¼ cupÂ
Dijon mustard - 1 tbspÂ
Gruyere cheese ( grated ) - 2 cups ( divided )Â
Avocado oil - 2 tbspÂ
Salt - to taste.
Topping: chopped parsley
Preparation
Pierce squash with fork and microwave for 5 min to make it easier to cup.Â
Chop onions, slice tomatoes, apples and cut squash.Â
In a medium size skillet add oil and saute onions until translucent, add squash and cook for 10 minutes until becomes brown, sprinkle with some salt. Add broth and seamer for another 10 minutes.Â
Make sauce: in a medium size saucepan, melt butter, remove from heat and mix in flour. Put it back on the heat and stir in milk until it becomes thick. Remove from the heat, add Dejon mustard, salt and 1 cup of cheese….mix it all well.Â
Transfer half cooked squash in the casserole or baking, air fryer safe dish, add sliced tomatoes, sauce, apples, green beans and cover everything with cheese. Â
Bake or air fry in the oven for 25-30 min at 400°F or until squash becomes soft.
Sprinkles with some fresh parsley and it is ready to serve. Â
