Stuffed potatoes with ground meat and sun dried tomatoes pesto

Ingredients

  • Potatoes ( yukon gold or russet ) - 15

  • Black truffle olive oil - 3 tbsp

  • Salt to taste

Pesto: 

  • Sun dried tomatoes - 1 cup 

  • Fresh basil - 1 cup

  • Parmesan cheese - ½ cup 

  • Extra virgin olive oil - ½ cup

  • Pine nuts - â…“ cup

  • Garlic - 4 cloves

  • Salt & pepper - to taste 

Stuffing: 

  • Minced beef - 1lb

  • Salt and pepper - to taste

  • Onion - ½ 

  • Oil - 1 tbsp

Sauce: 

  • San marzano tomatoes - 1 can 

  • Salt & pepper - to taste

  • Red pepper flakes

Preparation

  1. Cover potatoes with the oil and salt and air fry for 40 min @ 380°F 

  2. Combine all pesto ingredients in the food processor and slowly add oil. 

  3. To make stuffing saute onion and then add minced meat and saute until ready. Add salt and pepper to taste. 

  4. Make sauce by processing sun moran tomatoes in the food processor, add salt, pepper and red chili flakes. 


  5. Stuff potatoes with meat and pesto. Layer everything in the baking dish and cover with sauce. Bake for 20-25 min @ 400°F.
