Ingredients
Potatoes ( yukon gold or russet ) - 15
Black truffle olive oil - 3 tbsp
Salt to taste
Pesto:Â
Sun dried tomatoes - 1 cupÂ
Fresh basil - 1 cup
Parmesan cheese - ½ cupÂ
Extra virgin olive oil - ½ cup
Pine nuts - â…“ cup
Garlic - 4 cloves
Salt & pepper - to tasteÂ
Stuffing:Â
Minced beef - 1lb
Salt and pepper - to taste
Onion - ½Â
Oil - 1 tbsp
Sauce:Â
San marzano tomatoes - 1 canÂ
Salt & pepper - to taste
Red pepper flakes
Preparation
Cover potatoes with the oil and salt and air fry for 40 min @ 380°FÂ
Combine all pesto ingredients in the food processor and slowly add oil.Â
To make stuffing saute onion and then add minced meat and saute until ready. Add salt and pepper to taste.Â
Make sauce by processing sun moran tomatoes in the food processor, add salt, pepper and red chili flakes.Â
Stuff potatoes with meat and pesto. Layer everything in the baking dish and cover with sauce. Bake for 20-25 min @ 400°F.Â
