Taco cones with ricotta cheese and pulled chicken

Ingredients

  • Chicken breast - 1 ½ lb

  • Ricotta cheese  - 2 cups 

  • Salsa ( of your choice ) - 2 cups

  • Salt & pepper - to taste 

  • Cherry tomatoes ( halved ) - 1 cup

  • Shredded cheese ( mexican or cheddar ) - 1 cup 

  • Oil - 2 tbsp 

  • Soft flour tortillas - 8

Preparation


  1. Make pulled chicken: Mix chicken breast with salsa and cook in the Instant Pot on manual high pressure for 15 min with natural pressure release. Pull apart chicken using 2 forks. 

  2. Make one cut on the tortilla from center to the side, spread some ricotta cheese on top and roll it into a cone. Fill the cone with pulled chicken, sprinkle shredded cheese and sliced cherry tomatoes on top. Put taco cones in the baking dish, sprinkle some oil and bake at 380°F for 20 minutes.
