Bone-in chicken drumsticks - 2lb
Marinade:Â
Greek yogurt - ½ cupÂ
Lemon juice - 2 tbspÂ
Ginger powder - 1 tbspÂ

Tandoori masala - 1 tbsp
Garlic ( minced ) - 4 cloves
Fenugreek seeds - 1 tspÂ
Red chili powder - 1 tspÂ
Salt & pepper - to tasteÂ
Garam masala - 1 tsp
Cumin powder - 1 tsp
Roasted vegetables:Â
Root vegetables of your choice.Â

Olive oil & balsamic vinegar - I am using Laconiko products.Â

Raita sauce:Â
English cucumber ( chopped ) - ½ cupÂ
Greek yogurt - ½ cupÂ
Cilantro ( chopped ) - 2 tbspÂ
Cumin - 1 tspÂ
Salt & pepper - to taste Â
Preparation
So, you want to make some tandoori chicken with roasted vegetables and raita sauce in an air fryer? Well, get ready for a taste explosion! This recipe is so easy, even a chicken could do it.
First, grab some bone-in chicken drumsticks and make a few slices on each one. Then, mix together some Greek yogurt, lemon juice, ginger powder, oil, tandoori masala, garlic, fenugreek seeds, red chili powder, salt, pepper, garam masala, and cumin powder. Smother your chicken in this marinade and let it chill in the fridge for a bit.
While the chicken is getting its chill on, cut up some root veggies like radishes, sweet potatoes, and carrots. Sprinkle them with some spices and drizzle with oil and balsamic vinegar. Then, throw them in the air fryer for 15-20 minutes at 380°F.
When your veggies are almost done, air fry your chicken for 18-20 minutes at the same temperature. And voila! Your tandoori chicken is now crispy on the outside and soft on the inside, just like your favorite pillow.
Don't forget the raita sauce! Mix some English cucumber, Greek yogurt, cilantro, cumin, salt, and pepper together and serve with your chicken and veggies. Trust us, it's the perfect way to cool down after all that heat.
